Tabasco - Avery Island and Texas bound

Our day started out at 4C this morning and we headed out for a tour of

the Tabasco plant tour and shopping at their Country store.

Wow was it impressive and the toll only cost $1 to get on and off the Island. The history of the place was something else, five generations have been living there. It takes 3 years in oak barrels to ferment the peppers before they add the vinegar and finish the process. They have their own salt mine on the Island and cover the sealed barrels with holes in the top with a layer of salt. We got to watch the bottling process before heading off to their Country Store to taste some of their products and of course purchase some stuff to bring home. I figure Rick has enough for a few years of hot sauces!

We stopped for lunch at Prejeans Simply Cajun at Lafayette, Louisiana.

Mmm good!

Our stop for the night here is Orange, Texas at a Flying J Conoco Truck Stop.
